Remove usage of 11-7-stable for source installs

The use of the branch 11-7-stable meant release managers would have to
update this file every month, which is tedious and easy to overlook. To
work around this, we simply use a placeholder and make it clear that the
reader needs to replace this with the appropriate branch.
