dt-bindings: iio: accel: Add docs for ADXL372

Add the device tree binding documentation for the ADXL372 3-axis digital
accelerometer.

Required properties:
- compatible : should be "adi,adxl372"
- reg: SPI chip select number for the device
- spi-max-frequency: Max SPI frequency to use
Optional properties:
- interrupts: interrupt mapping for IRQ as documented in
